Last weekend we hit up the campsites off of Last Dollar Road in Telluride.
Our late season snowfall hasn't melted at our favorite spots so we've had to break habits and venture out around Telluride. We kept meals simple as we wanted to play with the camera in the fading sunlight and bright moon through the aspens.
We did however make gluten free s'mores that made me a pretty happy camper... although I found s'more inspiration from the
Bronski's and their "chores".
The next morning I was up first with the pups and took them on a walk through the woods before we returned to camp to make pancakes. I've been a fan of mixing all the dry stuff up and keeping in jars then adding the wet when the mood for pancakes strikes at home. For camping we took it a step further and added egg replacer to the dry stuff. We brought butter, 8oz soy milk and a dash of vanilla then stirred it up for perfect pancakes on the griddle.
Tonight we're back at home and back to perfecting
Thai Chicken Pizza...
I'd have to say we're getting pretty close...
